18/08/2014 - Poland A Juhas, too old to take care of the ewe's milking, is drinking tea in the bacowka while others are at work, milking. The bacowka is a traditional shelter made of wood where the Oscypek cheese is molded and smoked. Oscypek, a polish cheese made from ewe's milk, is a protected trade name under the EU's Protected Designation of Origin geographical indication since 2008. This cheese is the result of a traditional handcraft process perpetuated by mountaineers, the Juhasi.
